We had half a roasted sweet potato left over from the barbecue, and I was not sure what to do with it. Then I remember such a thing called sweet potato pancakes, so I googles for a recipe. They are practically the same as normal pancake, besides it substitutes sugar with sweet potato.
Everyone seemed to like them excepts me. I still think sweet potato as a savoury item, having it running thorough a supposedly sweet pancake is a bit weird. Sarah will be wanting me to roast for extra sweet potatoes every barbecues!
